Creamy Pesto Shrimp


Creamy Pesto Shrimp

They say it serves 8, but I think for a family of 5 would be perfect




Ingredients

1 lb linguine pasta

1/2 cup salted butter

2 cups heavy cream

Salt & Pepper to taste

2 cloves of garlic, minced

1 cup grated Parmesan cheese

4 oz cream cheese

3/4 cup pesto

1 lb large shrimp (30-40 count), peeled and detained

 3 Tb Fresh basil, chopped

Handful of shaved Parmesan

Bring a large pot of salted water to a boil. Add linguine pasta, and cook according to package & drain.

In a large skillet, melt the butter over medium heat. Stir in cream, cream cheese and season with salt, pepper, and minced garlic. Cook 10 minutes, stirring constantly.

Stir Parmesan cheese into cream sauce, stirring until thoroughly mixed. Blend in the pesto, and cook for  additional 5 minutes, until thickened.

Stir in the shrimp in the cream mixture, and cook until they turn pink, about 5-10 minutes. 

Add cream mixture to linguine, toss in sauce and top with fresh basil shaved parmesan and enjoy!
